Pretty Things


This is what I made for dinner last night and while it was tasty, I was more excited about how lovely it was. Two layers of alternating tomato sauce, baked and breaded eggplant slices and sauteed spinach with a poached egg on top and a liberal sprinkling of parm. Perfection!


One of my favorite things about living in Portland is the beginning of Spring when all of the pink trees start blooming.
